摘要
采用活体取水的方法,提取云南版纳甜龙竹中新鲜竹汁,经冷冻干燥,制成冻干粉,并对其营养成分进行分析,结果表明:云南版纳甜龙竹竹汁中含蛋白质10.08%、总黄酮77.36mg/100g、多酚38.70mg/100g、多糖46.95mg/100g、膳食纤维10.4%、硅0.25%、钙1.27%、镁0.70%、锗0.65mg/kg等多种矿物元素,富含14种氨基酸,总量为6.48%。
Fresh bamboo juice was extracted from Dendrocalamus giganteus grown in Yunnan and freeze-dried for anaoysis of the nutritional composition. The resulting power contained 10.08% proteins, 77.36 rag/100 g total flavonoids, 46.95 mg/100 g polysaccharides, 38.70 mg/100 g polyphenols, 10.4% dietary fiber, 0.25% Si, 1.27% Ca, 0.70% Mg, 0.65 mg/kg Ge, and 14 amino acids with a total amount of 6.48%.
