摘要 为了研究不同树龄对成熟期蛇龙珠葡萄果实品质的影响,分别以烟台地区3年生、5年生、6年生蛇龙珠为试材,跟踪测定了成熟期葡萄果实单果质量、糖酸和果皮色度、单宁、总酚以及总花色苷。结果表明,在成熟过程中葡萄树龄对蛇龙珠葡萄果实品质有影响:5年生和6年生的果实糖度和糖酸比系数要高于3年生的葡萄树;而3年生的蛇龙珠葡萄果粒小,果皮色度和酚类物质含量均较高;6年生的蛇龙珠葡萄果实总酸较低,pH值较高。综合比较,6年生的蛇龙珠葡萄品质最佳。 The study was to elucidate the effect of different vine ages on fruit quality of Cabernet Gernischet during ripening. With Cabernet Gernischet of three different ages (three years old, five years old, and six years old) from Yantai region as the materials, the single berry weight, soluble solids content, titratable acidity, pH, total soluble sugar, color, tannin, total phenol, and anthocyanins were tested. The results showed that the vine ages had greater effects on berry quality of Cabernet Gernischet during ripening. The grpae berries of five-years- old and six-years-old had higher sugar content and sugar-acid ratio than three-years-old. The grape berries of three-years-old were smaller in berries and had deeper color and higher phenols content in peel. The lower titratable acidity and higher pH were found in the grape berries of six-years-old which had the best wine-making quality.
