摘要
葡萄多酚类物质是葡萄重要的次生代谢产物,葡萄多酚具有较强的抗氧化活性,是一种很好的自由基清除剂和脂质过氧化抑制剂,其抗氧化性在药品、保健品、食品、化妆品等领域有很多应用。就葡萄多酚的提取方法和抗氧化方面的研究进行综述。
Grape polyphenols are important secondary metabolites of grape. The grape polyphenol with strong antioxidant activity is a good free radical scavengers and lipid peroxidation inhibitors. Its antioxidant activity has many applications in the field of medicine, health care products, food, cosmetics, etc. In this paper, the extraction of grape polyphenols and antioxidant are summarized.
