摘要
为了检测液态奶产品中单硬脂酸甘油酯的质量分数,研究了牛奶生产企业在液体奶产品中单硬脂酸甘油酯的添加量。通过加标回收率、精密度等试验确定了气相色谱法检测液态奶产品中单硬脂酸质量分数的方法。该方法使用VF-5毛细管色谱柱,配有FID检测器的Varian气相色谱仪检测了8个国产品牌的UHT纯牛奶,发现有3个品牌的纯牛奶中单硬脂酸甘油酯含量要比未经加工处理的鲜牛奶质量分数高。
In order to study the addition amount of glycerol monostearate in liquid milk products,the method of determination of glycerin monostearate in liquid milk products was established after the recovery of standard addition tests and the method precision tests by gas chro- matography. Eight domestic brands of UHT pure milk were determined by the Varian gas chromatograph equipped with VF-5 capillary col- umn and three brands of pure milk monostearin content were much larger than the processing of the content of fresh milk.
