保鲜剂对蓝莓贮藏效果及相关酶活性的影响 被引量:16

Effect of antistalingagent treatments on storage effectiveness and enzyme activity of blueberry

摘要 以"粉蓝"蓝莓果实为试验材料,研究0.1%的壳聚糖涂膜、1μL/L的1-MCP熏蒸以及先用0.1%的壳聚糖涂膜再用1μL/L的1-MCP熏蒸处理对4℃条件下贮藏的蓝莓果实腐烂率、失重率、呼吸强度、MDA含量及与成熟衰老相关的PG、PPO、POD、CAT等酶活性的影响。结果表明,3种处理均可抑制蓝莓果实贮藏期间腐烂和失重;抑制果实MDA含量的上升;一定程度上提高贮藏前期PG活性,降低后期活性;提高PPO、POD、CAT活性。3种处理对蓝莓果实均有提高保鲜效果的作用,但处理间效果存在差异:先壳聚糖涂膜再1-MCP熏蒸处理在抑制果实腐烂、失重和提高保护性酶POD和CAT活性方面效果最好;1-MCP熏蒸处理抑制果实MDA含量的上升作用最为明显,同时提高POD和CAT活性效果明显;壳聚糖涂膜处理降低了果实出现呼吸高峰时候的呼吸强度。综合效果大小顺序为:1-MCP熏蒸处理、壳聚糖涂膜后1-MCP熏蒸处理、壳聚糖涂膜处理。 The effects of 0.1% chitosan,1.0 μL/L 1-methylcyclopropene and 0.1% chitosan first and then 1.0 μL/L 1-methylcyclopropene treatments on decay index,weightlessness,respiratory intensity and MDA content on blueberry(Powderblue) were studied.And the effects of chitosan and 1-methylcyclopropene treatments on activities of maturing and declining,such as PG,PPO,POD,CAT were studied.Results showed that all the treatments obviously reduced decay index and weightlessness of buluberry which good for it's appearance quality;the increase of MDA was obviously attenuated,the activity of PG was increased at prophase and delayed at telophase,the activities of PPO,POD,CAT were increased.3 treatments maintained storage quality respectively,but effects had some differences:0.1% chitosan frist and then 1.0 μL/L 1-methylcyclopropene treatment had the best efficiencies in checking fruit rot and weightlessness,increasing activities of POD,CAT;1.0 μL/L 1-methylcyclopropene treatment had the best efficiency on inhibition on MDA content,also increasing activities of POD,CAT;0.1% chitosan treatment had a better effects on reducing respiration intensity at respiratory peak.Synthesizing the relevant date,the storage effect of 1.0 μL/L 1-methylcyclopropene treatment was the best,0.1% chitosan frist and then 1.0 μL/L 1-methylcyclopropene treatment was secondly,0.1% chitosan treatment was lastly.
