胶原蛋白速溶茶的研制

摘要 探讨以绿茶、猪皮为原料开发保健型胶原蛋白速溶茶的途径。利用单因素实验,对绿茶提取茶粉的条件、速溶茶的配方进行优化,获得制备胶原蛋白速溶茶的最佳工艺和关键技术。结果表明,茶粉最佳提取工艺为:用50%乙醇作提取剂,固液比1:20,浸提温度60~70℃,浓缩和干燥温度60~70℃。胶原蛋白速溶茶最佳配方为:按胶原蛋白12.9%、茶粉12.9%、植脂末9.7%、白砂糖64.5%,研制出了一种饮用方便、价格便宜、风味独特、营养保健的固体速溶茶饮品。 Explored the way to create a health collagen protein instant tea,using green tea and pigskin as raw materials.By single-factor experiments,we optimized the extracting conditions in extracting powder from green tea,as well as the formula for the instant tea.We obtained the key and optimal techniques in producing collagen protein instant tea.Our results have demonstrated that the best way to extract tea powder is using 50% ethanol as extracting agent,1:20 as the solid-to-liquid ratio,60~70 ℃ as the extracting/concentrating/drying temperature;the optimum formula for collagen protein instant tea is 12.9% collagen protein,12.9% tea powder,9.7% non-diary creamer,64.5% white granulated sugar.Thus,we have developed a novel type of collagen instant tea,which is convenient to drink,economic and at the same time tasty,nutritious and healthy.
