摘要
在食品工业中,许多对人体有害的致病微生物主要是以粘附在食品接触表面并形成生物被膜的形式而存在的,这些生物被膜不但会造成设备的腐蚀,更重要的是会污染食品,影响食品的安全。该研究着重介绍了生物被膜的特点及其耐药机制,分析了现有处理生物被膜的各种方法,设计了一套在试验室模拟生物被膜体外生长的模型,最后用标准的清洗流程和菌落计数的方法量化不同清洁剂的清洗效果,为以后生物被膜的控制与研究提供了思路。
The food safety is threatened when bacterial attaching to and growing (biofilm formation) on food contact surface are released into the product stream, as well as the erosion of equipment. This study introduced the feature of bacterial biofilm and its drug resistance, evaluated the disposal method of bacterial biofilm, designed a bacterial biofilm growth model in lab and finally standard cleaning process and total plant count were used to test the biofilm removal result quantitatively, which provide a new research advance of bacterial biofilm control in the future.
