摘要
提高高校食堂小吃店食品安全水平,保障师生身体健康和食品安全,为其食品安全管理提供对策。对该市31所高校食堂中的310家小吃店进行现场摸底调查。未取得餐饮服务许可的小吃店占68%;无健康证的从业人员占7%;布局和工艺流程不合理的小吃店占61.9%;餐饮具合格率为67.9%;自行消毒的消毒效果与集中消毒效果相比差异有统计学意义。加强高校食堂小吃店从业者的食品安全意识,鼓励高校食堂自我监督,更新卫生设备;改进卫生监督方法,加大执法力度,规范企业经营行为,加强预防性卫生监督和经常性卫生监督。
Purpose improves the safety of snack bar in university canteen, provide protection for teachers and students' health and food safety, provide solutions for food safety management. Method Thoroughly investi-gate in 310 snack Bars in 31 Nanchang university canteen. Result Snack bars which don't have food service license accounted for 68%which don't have health certificate practitioners accounted for 7%which layout and process unreasonable accounted for 61.9%The tableware qualified rate is 67.9%, the affection of self- disinfection compared to centralized disinfection affection havestatistically significant. Conclusion Strength-en the snack bar practitioners' awareness of food safety in university canteen, encourage self-monitoring in university canteen, improve health facilities and supervision methods, intensify law enforcement, standardize enterprise behavior, strengthen preventive health supervision and regular health supervision.
