摘要
用诺维信LYN05024液态酶在未添加水和有机溶剂的条件下水解大豆浓缩磷脂,通过响应面试验,获得了酶解大豆浓缩磷脂的最佳条件为:反应温度68℃,时间为1.1 h,加酶量为7.5%.此时磷脂的酸价从17.2 mg/g上升至38.58 mg/g.通过高效液相色谱法测定磷脂的组成,按PC反应前后相对含量的变化,得出酶解率为77%.
Condensed soybean phosphlipids was hydrolyzed by using liquid enzyme Novozymes LYN05024 without adding water and organic solvents. The optimum conditions were determined by response surface methodology as follows: reaction temperature 68 ℃, reaction time 1.1 hours and enzyme amount 7.5%. The acid value of the phospholipids increased from 17.2 mg/g to 38.58 mg/g after modification. The composition of phospholipids was determined by high performance liquid chromatography (HPLC), and the hydrolysis rate of condensed soybean phosphlipids was 77% after comparing the relative contents of condensed soybean phospholipids before and after the PC reaction.
