摘要
研究了一种活性乳酸菌梅新型食品中乳酸菌的检测方法,通过显微观察、耐酸、肠溶和平板培养等试验结果表明,该种活性乳酸梅中的乳酸菌经过了微胶囊化处理,每个微胶囊含有50-100个菌体。在模拟人体环境条件下,该微胶囊结构能够在45min肠环境中有效释放并且可耐受3h胃酸。通过选择性平板培养基鉴定试验确定了活体乳酸菌。因此该微胶囊结构可以耐受胃酸环境使其所含乳酸菌到达肠道释放,发挥有益菌群的作用。
The research set up a new method to detect the lactic acid bacteria in an active lactobacillus Mei food.Through microscopic observation,acid tolerance and bowel soluble tests,a formed microcapsule contained 50-100 lactic acid bacteria.In simulation of human in vivo conditions,the microcapsule structure released for 45 minutes in intestinal juice but tolerated for 3 hours in stomach acid.Lactic acid bacteria were identified with selective medium plate test.The microcapsule structure can tolerate the stomach acid with lactic acid bacteria being released in bowel,thus playing a beneficial role in bacteria flora in guts.
