摘要 采用响应面分析法(RSM)优化提取腐乳中大豆多肽的工艺条件.在单因素实验的基础上,选择提取温度、甲醇体积分数、提取时间、液料比作为实验因素,进行Box-Benhnken中心组合实验设计,评估了4个因素对大豆多肽提取量的影响.结果表明,提取腐乳中大豆多肽的最佳工艺条件为:温度57℃、甲醇体积分数69%、提取时间28 min、液料比(mL:g)9:1,最佳工艺条件下提取量为6.59g/100 g(干基) Response surface methodology (RSM)was applied to optimize the extraction process of soybean peptide from sufu. Based on single experiments, extraction temperature, solvent mass fraction, extraction time and solvent/sufu ratio were selected for Box-Benhnken central composite designing. RSM was employed to study the effect of these factors on the yield of soybean peptide. The results showed that the optimal processing conditions for the extraction technique of soybean peptide from sufu were 57 ℃ temperature, 69% of methanol concentration, the extraction time was 28 minutes, and solvent/sufu ratio was 9 : 1. Under these optimal extraction conditions, the extraction efficiency of soybean peptide from sufu was 6.59 g /100 g (dry basis).
