色谱技术在食品安全方面的应用

摘要 频繁曝光的食品安全问题,与人们的生活息息相关,越来越引起人们的高度重视,特别是最近几年,奶粉事件、瘦肉精事件、苏丹红事件以及最近的塑化剂等问题,越来越多的食品安全问题呈现眼前,食品安全直接影响人的生命健康,企业要想赢得消费者的信任,就得提高食品安全。在食品安全监控过程中,技术成熟、灵敏度高、使用快捷方便的色谱技术,被越来越广泛的应用。本文通过对色谱技术基本原理、特点的论述,阐述了色谱技术在食品安全检测中的应用及发展前景。 The frequent food safety issues are closely linked with people's lives, and arouse more and more attention. Particularly in recent years, milk powder incident, clenbuterol events, Sudan events and the recent plasticizing agentare, more and more food safety issues appear. Food safety directly impacts human life and health. If the enterprises want to win the trust of consumers, they have to improve food safety. In food safety monitoring process, the chromatographic techniques are more widely used due to its mature skills, high sensitivity, fast and convenient features. In this paper, through the exposition of the basic principles and characteristics of chromatographic techniques, application and development prospects of chromatography technology in food safety testing is analyzed.
