摘要
番茄籽是生产番茄制品时的副产物,番茄籽油含有大量的不饱和脂肪酸、生育酚和植物甾醇,是一种优质的食用植物油资源。现代医学和营养学的研究表明它具有抗氧化、调节心血管疾病和增强免疫等多种保健功能,具有极高的营养和药用价值,已成为当前保健植物油领域研究与开发的热点。通过综述近期国内外有关文献,在介绍番茄籽油理化性质的基础上,重点论述了番茄籽油的提取工艺及其影响因素,概括性阐述了番茄籽油的生理活性。同时也对番茄籽油研究的前景和方向进行了展望。
Tomato seed is a by -product of tomato processing. Tomato seed oil contains a variety'of unsaturated fatty acid, tocopherols, phytosterol, and other active substance and is a high quality resource of edible vegetable oil. To- mato seed oil had the effects of antioxidant activity, regulating cardiovascular diseases, increasing immune, and other functional activity. It became the research hotspot in the field of functional vegetable oil in recent years. By introducing the physicochemical of tomato seed oil, this paper mainly analyzed the extraction methods, summarized the influence factors on tomato seed oil extraction and biological activities of tomato seed oil. Furthermore, the development prospect of tomato seed oil was prospected.
