皖北地区白酒复杂组分的共性与特性分析

Analysis of the General and Particular Characteristics of Complex Components of Liquor Made in North Anhui

摘要 以皖北产白酒和皖北周边地区白酒为样品,以15种白酒骨架组分及24种复杂组分为变量,平方欧几里得距离为度量,采用Ward法进行聚类分析,探讨皖北白酒之间的共性与特性及其与周边白酒在风格上的关系。研究结果表明,皖北白酒虽与其他地区白酒虽在风格上存在差异,但是没有呈现明显的区域化特点,而复杂成分的相似性则为未来区域化特点的形成提供了可行性。 Liquor products made in or around north Anhui were used as the research objects. Liquor samples were classified by cluster analysis with 15 kinds of liquor frame components and 24 kinds of liquor complex components as the variables. The general and particular characteristics of complex components of liquor made in north Anhui, and the correlation in liquor styles between liquor made in north Anhui and liquor made around north Anhui were investigated. The results suggested that there was certain difference in liquor styles between liquor made in north Anhui and liquor made around north Anhui but such difference was not regional difference, and the similarity of complex components proved the feasibility of the formation of regional characteristics of liquor made in North Anhui in the future.
