摘要 该研究选择大米、玉米、小麦、燕麦为原料,采用单螺杆挤压技术,从配方、上光效果及复水性能3个角度研究开发杂粮保健人造米的制作工艺,确定最佳工艺条件,研究上光工艺,确定上光剂的最优配方和最优复水参数。初步摸索出杂粮保健人造米的制作工艺为:配方研究—粉碎—加水搅拌—挤压成型(机筒温度120℃、物料中水分含量24%、螺杆转速220r/min)—热风干燥(干燥温度80℃、干燥时间1 h、干燥时物料堆积厚度2 cm)—上光(选取壳聚糖与马铃薯淀粉作膜材料,配比为2∶1,甘油添加量为2.5%,pH为4,干燥温度为70℃)—复水试验的最优参数(复水时间11 min,复水温度99℃,水/米质量比2.2∶1)。 We chose rice, corn, wheat, oats to be as raw materials and used the single-screw extrusion technology, to study the process of synthetic rice with minor cereals from three aspects such as the formula, the gloss effect and rehydration properties to determine the optimum operating conditions. Studing gloss process, so that determining the optimal formula of the glozing agent and the optimal rehydration parameters. We initially explored the production process of synthetic rice with minor cereals as follows: formula-smash-add water and stir-extrusion (barrel temperature of 120 ℃, 24% of the material moisture content, screw speed 220 r/min)-hot air drying (drying temperature 80 ℃, drying time 1 h, dry material accumulation thickness 2 cm)-glozing agent (select chitosan and potato starch as membrane material, the ratio of 2 : 1, add 2.5% glycerol, pH = 4, the drying temperature 70 ℃ )-the optimal parameters (rehydration time 11 min, rehydration temperature 99℃, water/rice quality ratio of 2.2 : 1 ).
