摘要
采用火焰原子吸收法(FAAS)测定了潮州"后陇红"番薯中的钙、铜、铁、锌、钠、镁6种对人体有益微量元素,并对其中的水分、脂肪、总糖、蛋白质、维生素C等营养成分进行了测定.结果表明,潮州"后陇红"番薯营养成分丰富,富含对人体有益的微量元素,此研究为"后陇红"番薯的后续加工,提高其附加值提供了一定的科学依据.
In this article, six microelements beneficial to the human body, including Calcium, Cop- per, Iron, Zinc, Sodium and Magnesium in Chaozhou "Houlonghong" sweet potato are determined by flame atomic absorption method. Besides, the moisture content, total sugar, fat, protein, vitamin C and other nu- trients are analysed. The results show that Chaozhou "Houlonghong" sweet potato is rich in nutrition ingredients and microelements beneficial to human body. These studies were concerned with the follow-up processing of "Houlonghong" sweet potato to increase the added value. The proposed analytical method is also reliable, ac- curate, scientific.
