摘要
本文在分析蔗糖和转化精的比旋光性质的基础上,介绍了白砂糖生产转化糖浆的转化率快捷测定和计算式,并将这一方法绘制成计算图。使用该方法可以方便地对绵白糖生产中转化糖浆的制备过程进行测控。
Base on the polarizing properties of the sucrose and reducing sugars, this paper imtroduces a simple and direct method for calculating invert percentage when the sucrose is used for invert syrup preparation. Meanwhile, a calculating chart is drawn for the same purpose.
