摘要
研究高场强脉冲电场 (HEFP)的产生及其处理胡萝卜浆提高出汁率的机理 ,探讨处理后的胡萝卜汁的营养成分、外观、色泽、风味的变化情况。
The effect of high electric field pulses (HEFP) on mashed carrot was studied.The creation of HEFP was also concerned .The result showed that the HEFP-treatment had more advantages in juice yield,the appearance,the colour and the flavour of carrot juice comparing with traditional treatment.
