摘要
肉鸡加工中残翅表现为断翅、淤血、磨烂、脱臼。主要原因 :饲养管理不善 ,抓鸡、运输和挂鸡方法不当 ,宰杀、沥血、浸烫、脱毛、预冷等工艺和设备设计不合理。控制方法 :①合理工艺布局 ;②电或气晕处理 ;③暗室宰杀沥血 ;④合理选用和操作设备 ;⑤及时维护设备。
The damaged wings in broilers processing showed as wing broken,extravasated blood,wing worn,wing dislocated.And the main cause was:the ways were not proper in feeding management,catching chickens,transportating chickens,hanging up chickens.The processing and equipment designed were not reasonable in slaughtering,bleeding,scalding,plucking,pre-cooling.The ways of controlling:① making reasonable processing layout.② stunning chickens with electric or Co 2 gas.③ slaughtering and bleeding in darkness.④ selecting and operating the equipment reasonably.⑤ maintaining the equipment in time.
