摘要
目的:对浙江省新昌地区产花生品种小京生的基本理化性质、主要营养素含量、脂肪酸组成进行了研究。方法:采用直接干燥法测定水分含量,采用凯氏定氮法测定蛋白质含量,采用索氏测定粗脂肪含量,提取的油脂经甲酯化后用GS-MS分析脂肪酸组成。结果:小京生水分含量为4.98%、蛋白质含量24.48%、粗脂肪含量47.65%。油脂的主要由不饱和脂肪酸组成,占总脂肪酸的80.72%,其中油酸占54.88%,饱和脂肪酸占18.39%,油酸/亚油酸(O/L)比值为2.20。结论:小京生比普通花生含有更多蛋白质和不饱和脂肪酸,是营养价值优良的花生品种。
[Objective] The nutritional quality and fatty acids composition of Xinchang Xiaojingsheng peanut from Zhejiang province were analyzed. [Method] Moisture content was determined with direct drying method, kieldahl method was used to determine the protein content, crude fat content was analyzed by Saxhlet extraction determination, and fatty acids composition was determined after the peanut oil was esteri- fled and analyzed by gas chromatography-mass spectrometry (GC-MS). [Result] The moisture content, protein content and oil content of Xi- aojingsheng peanut was 4. 98% , 24. 48% and 47.65% , respectively. The main fatty acids of Xiaojinsheng peanut were unsaturated fatty acids, which accounted for 80. 72% of the total fatty acids content. Among them, oleic acid content was 54. 88% ,saturated fatty acid content was 18. 39% ,and the O/L ratio was 2. 20. [Conclusion] More protein and unsaturated fatty acid were found in Xiaojingsheng peanut, which indicated it' s a kind of nutritional peanut cultivar.
