摘要
以牡蛎为研究对象,在冷冻条件下,采用涂膜技术进行保鲜贮藏试验,探讨其在此过程中pH、硫代巴比妥酸(TBA)、游离脂肪酸(FFA)、总挥发性盐基氮(TVBN)、Ca2+-ATPase值等生化指标的变化。结果表明,使用生物保鲜剂结合涂膜技术的复合保鲜效果明显好于空白处理,通过研究牡蛎生化指标的变化规律,为牡蛎冷冻保藏,长距离运输及销售等提供参考。
Researching on Oyster. Oyster was storage with coating under the conditions in frozen environment, to explore its changes of pH,TBA,FFA,TVBN and Ca2+-ATPase during the processing. The resutts showed that: the storage method of biological preservative-coating is obviously better than the general group. By researching on changes of biochemical parameters during frozen Oyster storage, provide reference norms for frozen Oyster storage, long-transportation and sales.
