摘要
以多孔玉米淀粉为原料,应用乙醇碱法制备得到冷水可溶性多孔玉米淀粉。通过研究NaOH溶液用量、乙醇溶液体积分数、反应时间以及反应温度对产品冷水溶解度和吸油率的影响,得出冷水可溶性多孔玉米淀粉的制备条件:NaOH质量分数10%,乙醇体积分数80%,反应时间30 min,反应温度50℃,在此条件下所制的产品的冷水溶解比例为42%,最高吸油率为68%。
The cold-water-soluble porous corn starches are perpetrated by using porous corn starch as materials and using the method of alcoholic-alkaline. The effect of react conduction on the cold-water-soluble rate and oil absorption rate is studied. The preparation conditions are as below: sodium hydroxide, 10% ; volume fraction of ethanol, 80% ; reaction time, 30 min; and reaction temperature, 50 ℃. Under these conditions, the cold-water-soluble rate and the oil absorption rate of conductions respectively are 42% and 68%.
