摘要
以高筋面粉、无铝油条膨松剂、玉米粉、牛奶、鸡蛋、食盐、食糖等为原料,通过单因素试验和正交试验对无铝油条进行配方设计。结果表明,无铝油条选优配方在高筋面粉基本配料基础上添加鸡蛋12%,牛奶35%,玉米粉10%;饧发温度37℃,饧发时间3 h,可以生产出无铝优质油条。
A high-gluten flour, non-aluminum the fritters leavening agent, corn flour, milk, eggs, salt, sugar, and other raw materials, aluminum-free fritters recipe by single factor test and orthogonal test design. The results show that, no aluminum fritters excellent selection formula on the basis of the basic ingredients of high-gluten flour add eggs to 12%, milk 35%, 10% corn flour; a proofing temperature 37 ℃, proofing time 3 h, can produce aluminum quality fritters.
