摘要
为了研究不同浓度解偶联剂2,4-二硝基苯酚(DNP)处理对巨峰葡萄浆果贮藏品质的影响,分别用0.05 mmol/L、0.10 mmol/L和0.20 mmol/L DNP浸泡葡萄果实30 min,以蒸馏水处理为对照,果实晾干后用0.015mm厚的聚乙烯薄膜袋密封包装,在4℃下贮藏。定期测定贮藏期间果实的硬度、可溶性固形物(TSS)含量、呼吸速率、丙二醛(MDA)含量、抗坏血酸过氧化物酶(APX)活性和抗坏血酸(AsA)含量的变化。结果表明:适宜浓度的DNP处理能够显著抑制葡萄果实贮藏过程中呼吸强度的上升;显著地抑制果实组织中MDA含量的增加;显著地抑制果实TSS含量的下降;延缓果肉中AsA含量的下降,抑制APX活性的降低。DNP处理对葡萄果实具有较好的保鲜效果,能维持较好的贮藏品质。
To investigate the effects of different concentrations of DNP (2,4-dinitrophenol), an uncoupling agent, on the quality of harvested grape fruits during storage, the grape fruits were separately dipped in 0.05 mmol/L, 0. 10 mmol/L and 0.20 mmol/L DNP for 30 min. The control fruits were dipped in distilled water. The fruits were air-dried and stored at 4 ℃. During storage, the changes of the hardness, soluble solids contents, respiratory rate, malondialdehyde (MDA) content, ascorbic acid peroxidase (APX) activity and ascorbic acid (AsA) content were measured regularly. DNP treatments could significantly inhibit the increase of respiration intensity of grape fruits, the increase of MDA content of grape tissue, and the decrease of total soluble solids (TSS) contents, delay the decrease of AsA content, and inhibit the decrease of APX activity during storage. In conclusion, DNP treatment may play a positive role in grape fruits storage.
