摘要
以马铃薯淀粉为原料合成了马铃薯淀粉醋酸酯 ,研究了其合成工艺条件 .实验表明 :在淀粉浓度为 40 % ,淀粉与醋酸酐的物质的量之比约为 10∶1,反应温度为 30℃ ,反应时间为 1h ,pH值为 8.0~ 8.2的条件下 ,可制得乙酰基含量约为 2 .5 %的淀粉醋酸酯 ,醋酸酐的利用率为 80 % ,可用于食品工业 .
Potato starch acetate is prepared from potato starch and the reaction conditions are studied. The results show that the potato starch acetate with about 2.5% acetyl content can be obtained under the following conditions: starch concentration 40%,weight ratio of starch and acetic anhydride 10∶1,reaction temperature 30?℃,reaction time 1 hour, pH 8.0~8.2.The usable ratio of acetic anhydride is 80%, which can be used in food industry.
