摘要
目的研究槲皮素与牛血清蛋白的相互作用,为阐明槲皮素在体内的运输过程提供参考。方法利用荧光光谱法进行实验,采用Stern-Volmer方程、Lineweaver-Burk双倒数方程处理实验数据。结果静态淬灭是导致槲皮素对牛血清蛋白荧光淬灭的主要原因,氢键和范德华力在槲皮素与牛血清蛋白的相互作用中占主导作用。结论槲皮素可以被血清蛋白储存和运输。
Objective To study the interactive mechanism of bovine serum albumin (BSA) with quercetin in order to clarify the transport process of quereetin in vivo. Methods Fluorescence spectroscopy was used to study the interaction of BSA with quercetin. The Steru-Volmer curve and Lineweaver-Burk curve were used to deal with the data of fluorescence quench. Re- suits The fluorescence quenching mechanism of BSA by quercetin was static quenching procedure and the major part of the action forces were van der Waals interaction and hydrogen bond. Conclusion Quercetin can be storaged and transported by serum albumin.
