摘要
[目的]研究不同n-6/n-3PUFA比例日粮对扬州鹅肌肉氨基酸和肌苷酸的影响。[方法]选择160只21日龄扬州鹅160只(公母各半)随机分为4组,在扬州鹅基础日粮中添加不同比例n-6/n-3PUFAs,研究不同n-6/n-3PUFA比例日粮对扬州鹅肌肉氨基酸和肌苷酸的影响。[结果]当n-6/n-3PUFA为9∶1时谷氨酸、天冬氨酸、精氨酸、丙氨酸和甘氨酸的含量最高,且天冬氨酸和精氨酸的含量显著高于n-6/n-3PUFA为12∶1时(P<0.05)。当n-6/n-3PUFA比例为9∶1时扬州鹅肌肉中肌苷酸含量显著高于n-6/n-3PUFA比例为6∶1(P<0.05)。[结论]当n-6/n-3PUFA比例为9∶1时扬州鹅肌肉鲜味较好。
[ Objective] The research aimed to study the effects of different n-6/n-3PUFA ratios on the amino acid and inosinic acid in the muscle of Yangzhou Goose. [ Method] 160 21 - day old Yangzhou Goose were randomly divided into four groups. Different ratios of n-6/n-3 PUFAs were added in the basic diet of Yangzhou Goose to study the effects of different ratios of n-6/n-3 PUFAs on the amino acid and inosinic acid in the muscle of Yangzhou Goose. [Result] When the ratio of n-6 PUFA to n-3PUFA was 9:1, the contents of glutamic acid,aspartic acid, arginine acid, alanine acid and glycine acid were the highest and the contents of aspartic acid and arginine acid were significantly higher than that at n-6/n-3 PUFAs ratio of 12:1 ( P 〈 O. 05 ). When n-6/n-3PUFAs ratio was 9:1, the content of inosinic acid in the muscle of Yang- zhou Goose was significantly higher than that at n-6/n-3 PUFAs ratio of 6:1 (P 〈 0.05 ). [Conclusion] When n-6/n-3 PUFA ratio was 9:1, the muscle flavor of Yang,zhou Goose was better,
