摘要
对僵藕萌发过程中还原糖、淀粉、可溶性蛋白质和含水量的动态变化进行了研究。结果表明 :重僵藕在萌发过程中还原糖、淀粉、可溶性蛋白质和水分含量均依次低于中度僵藕和正常藕 ;淀粉、可溶性蛋白和水分含量在萌发过程中均呈下降趋势 ,而还原糖含量则呈上升趋势 ;重僵藕在萌发过程中还原糖含量始终约为正常藕的 50 %
WT5”,6BZ]The main storage nutritions changed in germinating stiff lotus were studied. The results showed that reducing sugar, soluble protein, starch and water contents in hard stiff lotus were successively lower than those in middle stiff lotus and CK. Starch, soluble protein and water contents in both stiff lotus and CK were all decreased during germinating, while reducing sugar were increased. Reducing sugar content in hard stiff lotus was continuousely about 50% of it in CK.
