烘烤过程中烟叶的水分动态与生理变化关系的研究 被引量:69

摘要 研究了烟叶烘烤过程中某些生理变化及与水分动态的关系 .结果表明 ,随着烘烤过程的进展 ,失水速度表现为先慢后快再减慢的S型曲线变化 ;丙二醛 (MDA)积累量与失水率密切相关 (r =0 .8492 ) ;叶绿素的降解量与失水率呈显著负相关(- 0 91 0 1 ) ;脂氧合酶 (LOX)活性在 0~ 2 4h缓慢升高 ,2 4~ 48h期间急剧上升 ,48h水分散失 34 7%时达到高峰 ,之后明显下降 ,直到活性消失 . The moisture content change and some physiological mechanism in tobacco leaf during flue curing process were studied. The results indicated that, together with the proceeding of flue curing, the moisture loss rate appeared to be an “s” curve; the accelarated content of MDA and moisture loss ratio had a close relation ( r =0.849 2); the degradation of carotenoid and chlorophyll and moisture loss ratio had a significant negative correlation, the correlation coefficient respectively was 0.910 1 and -0.811 0; the LOX activity increased slowly between 0 and 24 hour, and rapidly between 24 and 48 hour; after curing for 48 hours and when moisture lost 34.7%, the LOX activity got its highest peak, then it decreased until disappeared. The LOX activity and the degradation of chlorophyll were significantly correlated.
