概述了用于天然抗氧化剂开发的天然资源 ,综述了天然抗氧化剂的结构类型、构效关系及抗氧化作用机理 。
Natural resources for exploiting natural antioxidants were generalized.The types of structures,the structure effect relationship and the antioxidant mechanism of natural antioxidants were summarized.The problems in the researches on natural antioxidants and prospects were discussed.
