摘要
利用邻苯三酚 32 5nm自氧化法研究了SOD在不同饮品中活性的变化 .结果表明 :SOD活性受饮品的色泽、成分、酸碱度、乙醇含量等多种因素的影响 ,在无色的、近中性饮品中SOD活性较稳定[3]
Activity of SOD was studied on different kinds of beverages by method of 325 nm pyrogallol autoxidtion.The results showed that the activity of SOD was affected the factors such as color,consist,pH,and alcohol concentration of beverage.Activity of SOD in colorless and neutrality beverage has more stabiltiy.
