籽瓜瓜瓤中提取果胶的工艺研究 被引量:8

Study on Extracting Technology of Pectin from Seed Melon Pulp

摘要 以籽瓜瓜瓤为原料,采取酸提醇析的方法提取果胶。通过对萃取剂种类、pH、料液比、萃取温度和萃取时间进行单因素试验,采用正交试验对提取果胶的最佳工艺条件进行优化。试验结果表明,H2SO4作萃取剂,籽瓜瓜瓤果胶提取的最佳工艺条件为:pH为2.0,料液比为1︰15(m/V),萃取时间1.5h,萃取温度为80℃,果胶产率为18.7%。 With seed melon pulp as the raw material, acid extraction and ethanol analysis method of to extract pectin were taken. The kind of acid, the pH, the amount of extractant, the temperature and the time of extraction were investigated by single factor and orthogonal experiment. The results analyses showed that H2SO4 as the extractant, the optimum technological parameters as follows; pH was 2.0, the ratio of solid to liquid was 1 : 15 (m/V), the extracting time was 1.5 h, the extracting temperature was 80℃, the extracting efficiency of pectin was 18.7%.
