摘要
以乙醇为溶剂,采用微波辅助法从贺州大肉姜中提取抑菌活性成分,研究了大肉姜乙醇提取物对食品中常见的几个污染菌的抑菌作用。结果表明:大肉姜乙醇提取物对大肠杆菌、金黄色葡萄球菌、酵母菌、黑曲霉均有明显抑制作用,其MIC值分别0.03125%、0.0625%、0.0078%、0.1250%;该抑菌活性成分在一定范围的温度、pH环境条件下仍然能保持较好的稳定性。
Effective components from Zingiber officinale Roscoe were extracted by using ethanol as solvent, and the antibacterial action of Zingiber officinale Roscoe were studied. The results showed that microorganism like Echerichia coli ,Staphylo-coccus aureus, Saccharomyces cere-visiae, Aspergillus sp were inhibited well by the extracts of Zingiber officinale Roscoe. The MIC for each kind of microorganism was respectively as follows.0. 03125 %,0. 0625 %,0. 0078 %, o. 1250%.the stability of the extracting solution was well under certain temperature and pH.
