摘要 玉米黄粉是玉米提取淀粉的副产物,常被当作废物处理。以此为原料制备玉米肽以提高其附加值。研究运用酶法制备玉米多肽,确定了添加半胱氨酸对其预处理。用碱性蛋白酶对其酶解,并用膜技术对玉米多肽液进行浓缩和纯化的工艺流程。碱性蛋白酶的最佳水解条件为:底物浓度2.0%,酶与底物浓度比为3.0%,温度50℃,pH为8.5。经过膜处理后,玉米多肽液可浓缩4.9倍,脱盐率达90.52%。 Corn gluten meal is the main by-produces in the extraction of starch from corn, but which is often discarded. Making corn peptides to add value of corn gluten meal is studied. Maken research on making corn pep- tides by using enzyme and ensure the process, in the which is added cysteine as the best way of pretreatment use al- kaline protease to hydrolyze corn gluten meal, and apply membrane technology to enrichment and purification. The best conditions for enzyme solution is substrate content 2%, E/S 3%, temperature 50 ~C, pH 8.5. After using membrane technology, corn peptide solution can be concentrated 4.9 times and rate of desalination is 90. 52%.
