摘要
以挤压后的苹果渣为原料,利用纤维素酶对膳食纤维进行改性,以提高可溶性膳食纤维的含量,从而提高产品的功能性。通过单因素和正交试验证明,酶解温度60℃,酶解时间4h,pH5.5,加酶量12%为挤压苹果渣中膳食纤维酶法改性的最佳工艺条件。在此条件下,苹果渣中SDF的溶出量为26.79%。
With apple pomace as raw materials, through the enzymatic modification to improve the content of soluble dietary fiber and the functionality of the product. By single-factor experiment and orthogonal experiment, the best condition is enzymolysis temperature of 60 ℃, enzymolysis time of 4 h, pH4.0 and cellulase enzyme dosage of 12%, under this condition, the dissolved quantity of soluble dietary fiber (SDF) in apple pomace was 26.79%.
