利用秀珍菇富硒固体培养优化麦麸膳食纤维营养品质 被引量:4

Optimizing Nutritional Value of Wheat Bran through Pleurotus geesteranus Cultivation on a Selenium-enriched Medium

摘要 以麦麸为营养基质,通过秀珍菇富硒固体培养的生物降解与营养转化代谢,实现对麦麸膳食纤维复合菌粉的硒营养品质优化效果。结果显示,在秀珍菇硒营养代谢安全阈值(单位培养基质的亚硒酸钠添加量=3μg.g-1)水平下,经秀珍菇富硒固体培养的麦麸膳食纤维复合菌粉(富硒组),生物有机硒平均含量可达1.63mg.kg-1,是麦麸原料硒营养含量的56倍之多,硒营养转化平均效率达86%左右。除去硒营养成分含量外,与对照组(CK)比较,富硒组培养产物的膳食纤维与总蛋白、可溶性总糖、可溶性蛋白含量等营养品质没有显著的差异。试验证实,以麦麸为基质的秀珍菇富硒固体培养转化代谢过程,可有效促进食用菌对基质中无机硒的营养转化代谢,显著提高培养产物中生物有机硒成分含量,达到优化麦麸膳食纤维复合菌粉中有机硒含量的营养品质。 Taking advantage of the metabolic transformation on a selenium (Se) -enriched wheat bran medium by Pleurotus geesteranus, the nutritional value of the resultant dietary fiber powder could be substantially improved. The average content of biological organic Se content in the wheat bran powder reached 1.63 mg/kg with an added 3 /~g ~ g ~ of sodium selenite that is within the safe threshold of Se nutrition metabolization. The amount was more than 56 times of the Se content in wheat bran, indicating an average Se conversion efficiency of approximately 86 %. Aside from Se, the dietary fiber, total protein, total soluble sugars and proteins in the treatment powder did not differ significantly from the control. The result suggested that the cultivation of P. geesteranus on a wheat bran based medium enriched with Se could enhance the inorganic Se transformation improving the bioavailability of the mineral, and thus, the nutritional value of the wheat bran/mushroom powder.
