摘要
本试验采用了羟自由基体系、超氧阴离子体系、ABTS体系和DPPH体系4种不同的体外抗氧化模型进行大蒜绿色素体外抗氧化活性研究,结果表明,大蒜绿色素对羟自由基(.OH)、超氧阴离子(O2-.)、ABTS自由基、DPPH自由基均表现出抗氧化活性,且随着大蒜绿色素浓度增加,自由基清除率显著增加。大蒜绿色素清除自由基的能力顺序为:羟自由基>超氧阴离子>ABTS自由基>DPPH自由基。
The study on the in vitro antioxidant activity of garlic green pigments was conducted with four different in vitro antioxidant models, they were hydroxyl radical system, superoxide anion system, DPPH system and ABTS system. The results showed that the pigments presented antioxidant activity on all of the four radicals. As the concentration of garlic green pigments raised, the rate of radical scavenging increased significandy. The abili- ty of garlic green pigments on scavenging free radical were ranked as follows : hydroxyl radicals 〉 superoxide an- ion radicals 〉 ABTS radicals 〉 DPPH radicals.
