摘要
采用喷雾干燥法制备高载量(60%)微胶囊化棕榈仁油粉末油脂,对其制备工艺条件进行优化,并对获得的微胶囊化棕榈仁油粉末油脂的性质进行分析。研究结果表明:高载量微胶囊化棕榈仁油粉末油脂的最佳工艺条件为:辛烯基琥珀酸酯化(OSA)变性淀粉与麦芽糊精质量比为2∶1,黄原胶添加量为0.15%;乳化剪切速率为9 500 r/min,乳化时间为3 min,均质压力为40 MPa,均质次数为2次;进风温度为190℃,出风温度为85~95℃。用该法制备获得的高载量微胶囊化棕榈仁油粉末油脂为白色均匀粉末,理化性质良好。
In this study,the processing conditions of preparing high-load(60%) palm kernel oil microencapsules by spray-drying method were studied.The properties of microencapsules containing oil were also analyzed.The optimum processing conditions were: OSA(octenylsuccinate) modified starch and maltodextrin ratio 2∶ 1,xanthan gum content 0.15%;emulsification rate 9500 r/min for 3 min;homogenization twice at pressure of 40 MPa;inlet and outlet air temperature 190℃,85~95℃ respectively.The high-load palm kernel oil microencapsules prepared by this method were white powder with good physicochemical properties.
