摘要
本文在分析船舶食品供应单位管理结构的基础上,阐述HACCP原理在船舶食品供应单位运用的可行性,并在分析各类供船食品危害的基础上,提出了前提性方案与关键点控制相结合的卫生管理思路。
On the basis of analyzing the management structure of food supply units for shipping, this thesis ex- pounds the feasibility of applying HACCP principle to food supply units for shipping; besides, on the basis of analy- zing the harms of various foods for shipping, it proposes the health management thoughts with the combination of prerequisite project and key point control.
