摘要
烹饪教学研究是提高烹饪专业教师素质的熔炉,是使烹饪专业教师从"教书匠"走向名师和专家学者的必经之路。烹饪教学研究的选题就在身边,研究的方法多种多样,研究的过程也有一定规律可循,其成果应当积极发表,广泛传播。
Abstract： Teaching and doing research on culinary science is a possible source for professional teachers＇ im- provement. And it is indispensable for teachers to become masters, specialists or scholars. Topics for such re- search are everywhere around us, and the research methods remain varied. There are laws to be explored for doing research. The results and publishing of thesis are sure to contribute.
