关于酒精生产中增加氮元素抑制杂醇油生成的探讨

杂醇油含量的大小是影响酒精质量的重要因素之一 ,为了提高酒精质量 ,对酒精生产中抑制杂醇油的生成进行探讨 ,通过添加不同量的氮元素 (脲素 )进行实验 ,找出醪液中最佳脲素加入量 ,有效促使酵母菌体的生成 ,并阻止或延缓氨基酸的分解 ,抑制杂醇油的生成。

The contents of fusel oil is one of the important factors to affect the quality of alcohol,In order to improve the quality of alcohol,had a study on the controlling the increase of fusel oil,Adding to different amounts N-element,found a way-the N-element adding contents in mash,efficiently fertilize for yeast bacteria,stop and postpone the break up of a-amino acid,hold up fusel oil.
