摘要
以珍珠番石榴为试材,对冷藏(10℃)条件下自发气调包装番石榴的品质与生理指标进行研究。结果表明,冷藏自发气调包装能减少番石榴果实水分散失,有效抑制番石榴果实的呼吸强度、质膜相对透性和过氧化物酶活性,延缓果实衰老,有利于保持番石榴果实原有的风味品质和延长果实的贮藏时间;冷藏28天后,自发气调包装的好果率高达100%,贮藏时间分别比密封套袋和对照(不套袋)延长了7天和14天。
The quality and physiological index of pearl guava fruit in modified atmosphere package un- der refrigeration (10 ~C) were studied. Results showed that modified atmosphere package (MAP) at low temperature could reduce the water loss of pearl guava fruit, restrain the respiratory intensity, membrane permeability and Peroxidase (POD) activities, and delay the senescence of fruit, which were propitious to prolong the storage and keep the intrinsic flavour of guava fruit. After 28 days storage at low temperature, the good fruit rate was 100%. The storage time of MAP fruits was extended for 7 days and 14 days than that of the sealing bag and unbagged respectively.
