摘要
冰温技术作为一种新兴的食品贮藏保鲜技术,既能抑制微生物的生长繁殖,又能保证食品的理化和感官品质。着重介绍冰温技术的机理、特点以及应用,旨在为冰温技术在食品领域的深入研究与进一步应用提供参考。
As a new fresh-keeping technology, controlled freezing point technique can inhibit the growth and reproduction of deleterious microbe and keep physieoehemieal and sensory properties of food. This paper aims to introduce the mechanism, characteristics and applications of controlled freezing point technology, hoping to provide insight for further research and applications.
