摘要
对壳聚糖酶理化性质进行初步实验研究,通过测定不同条件下酶的活力来研究酶的性质.实验结果表明,所用菌种所产壳聚糖酶最适反应温度和pH值分别为50℃和5.6,NH+对该酶有明显的促进作用,而Na+,K+,Mg2+,Cu2+,Ag+,NH+,Mn2+对该酶有一定的抑制作用.Fe3+,Ca2+对酶的抵制作用最明显.
The physical and chemical properties of chitosanase were studied,by means of measuring the activity of this enzyme under various conditions.Results showed that the optimal temperature for chitosanase was 50 ℃ and the optimal pH was 5.6.NH + enhanced the enzymic activity considerably,whereas Fe3+,Ca2+inhibited the activity to some degree.Na+,K+,Mg2+,Cu2+,Ag+ and Mn2+ have the most conspicuous inhibition of this enzyme.
