摘要
油脂在加工储藏过程中,由于受光线、空气、温度等因素的影响,易发生氧化酸败。经氧化酸败以后的油脂酸价和过氧化值升高,物理和化学性质发生改变。采用活性白土吸附法,水蒸气蒸馏法和还原法对氧化型油脂进行品质改良处理。实验结果表明:三种方法均能降低油脂的过氧化值。而水蒸气蒸馏法对改变氧化型油脂的品质是最有效的方法。
In the process of processing and storage,grease is vulnerable to oxidative rancidity because of the factors such as the light,air,temperature.Oil acid and peroxide value increases after the oxidative rancidity,and the physical and chemical properties change.Use activated clay adsorption method,and water vapor distillation and reduction method to improve oxidated oil quality.The experimental results show that the three methods can reduce fat peroxide value.And water vapor distillation for the change of oxidated oil quality is the most effective method.
