印尼产燕窝质量标准的研究 被引量:3

摘要 目的测定印尼燕窝水分、灰分、总氮、氨基酸等含量,为燕窝提供评价依据。方法参照2010版中国药典水分、灰分、含氮量的测定方法,紫外-可见光分光光度法于波长365nm下检测其荧光,高效液相色谱法JY/T024-1996测定氨基酸。结果燕窝水分为15.0%~16.3%;灰分为3.4%~3.9%,含量氮为7.3%~8.4%。金丝燕窝、白燕窝、象牙白燕窝3种印尼燕窝在365nm下显蓝白色,血燕窝显淡黄色。燕窝氨基酸总量在46.5%~50.1%,Asp、Pro、Ser、Leu、Glu、Thr含量较高。结论印尼燕窝的研究结果可以作为燕窝真伪鉴定的参考标准。 OBJECTIVE To provide the bais for quality evaluation of edible's bird nest of Indonesion by de- terming the contents of the moistrue, ash,nitrogen and amino acid. METHODS The contents of moistrue, ash, nitro- gen and Fluorescence were determinated by the way according to Chinese pharmacopoeia( edit. 2010). The contents of amino acid were determinated by HPLC according to JY/T024-1996. RESULTS In edible's bird nest, contents of moistrue were between 15.0% and 16. 3% ,double of research in literatrue report. The contents of ash were from 3.4% to 3.9% ;and amino acid were between 46. 5% and 50. 1% ,the predominant amino acids were Asp,Pro,Ser, Leu,Glu,Thr. CONCLUSION The results can use for authenticity test of edible's bird nest.
