鄂尔多斯市市售食品食源性致病菌污染调查报告

摘要 目的了解鄂尔多斯市市售食品中食源性致病菌污染状况。方法随机采集6类228份食品,依据国标方法,对样品分别进行沙门氏菌、志贺氏菌、肠出血型大肠埃希氏菌O157H7、金黄色葡萄球菌、单增李斯特菌、蜡样芽胞杆菌分离、生化及血清学鉴定。结果 6类228份样品,共检出致病菌56株(总检出率24.56%),其中单增李斯特菌52株、沙门氏菌2株、金黄色葡萄球菌2株,检出率分别是22.81%、0.88%、0.88%。结论生禽肉、牛羊肉是鄂尔多斯市主要污染食品;单增李斯特菌、沙门氏菌和金黄色葡萄球菌是本市常见的食源性致病菌,而且以单增李斯特菌为主。其次为沙门氏菌、金黄色葡萄球菌。 Objective The purpose of this paper is to describe the food borne pathogen in foods commercially available in Ordos area. Methods According to the national standard method, the Salmonella, shigella, intestinal hemorrhagic Escherichiacoli O157H7, Staphylococcis aureus, Listcria monocytogenes and bacillus cereus were carried out from the randomly selected 228 food samples in 6 categories to do the Bin-chemical and serological identification. Results In the 6 categories of the 228 food samples, a total of 56 pathogens were detected with the total detection rate of 24.56%, of those 52 Listeria monocytogenes are detected, 2 Salmonellas, and 2 Staphylococcis aureus, separately with the detection rate of 22.81%, 0.88%, 0.88%. Conclusion The major contaminated food in Ordos area are raw poultry, raw beef and mutton; the common food borne pathogens in Ordos area are the Listeria monocytogcnes, Salmonella and Staphylococcis aureus, of those the Listeria monocytogenes is the most common food borne pathogens, then the Salmonella and Staphylococcis aureus.
