合肥市售冰鲜鸡肉中沙门菌及微生物污染状况调查 被引量:3

Study on Salmonella and microbiological contamination in chilled chicken of Hefei

摘要 目的:对合肥市场销售的冰鲜鸡肉中的微生物菌落总数和沙门菌的种类、污染程度调查分析。方法:2012年3月-2012年7月从合肥地区4家超市采集各类鸡肉样品共48件,采用GB4789.2-2010与GB4789.4-2010方法,对鸡肉表面的菌落总数、沙门菌进行检测。结果:合肥地区超市中销售的冰鲜鸡肉的菌落总数均小于106cfu/g;检出沙门菌11株,血清型4种为:鼠伤寒沙门菌、肠炎沙门菌、德尔卑沙门菌和印第安沙门菌。结论:除一家超市外,冰鲜整鸡的微生物安全性高于分项鸡肉,分项鸡肉中,鸡翅的污染最为严重。 Objective:To study total colonies numbers and the Salmonella contamination of chilled chicken products in Hefei supermarkets, offering the data for risk assessment of Salmonella in chicken in Hefei. Methods: From March to July of 2012, fortyeight chicken samples were collected from four supermarkets in Hefei, the total plate count, the contamination of Salmonella were detected in accordance with GB4789.2 - 2010 and GB4789.4 - 2010. Results: The total plate count of fresh chilled chicken in the supermarkets of Hefei was less than 106 cfu/g; eleven Salmonella strains including four serotypes: S. typhimurium,S, enteritidis, S. derby and S. indiana were detected in these samples. Conclusion: The microbiological safety of the whole chicken is better than split chicken products except one supermarket. Among the different split chicken products, chicken wings is the most serious in pollution.
