海洋鱼油的利用及其食品安全的控制要求 被引量:4

摘要 随着国家把发展海洋经济作为一个重要的战略,海洋生物资源的高值化利用已成为海洋经济发展所要研究的重要内容之一。本文主要研究海洋鱼油作为一个重要的海洋生物资源,如何通过高科技来进行高值化利用,将海洋鱼油中的有效物质——EPA(二十碳五烯酸)和DHA(二十二碳六烯酸)等ω-3多不饱和脂肪酸进行富集,提高产品的附加值,同时随着科学研究的不断深入和产业的不断提升升级,不断地提高产品纯度和产品质量,来确保产品的残留越来越少,越来越纯净,从而确保产品的食品安全问题,使海洋鱼油加工行业朝着食品、保健品,乃至药品的方向不断发展。本文对海洋鱼油的开发和利用以及在此过程中对食品安全的控制要求进行了综述和分析。
