873名学龄前儿童蔬菜摄入与家长对蔬菜认知行为的调查

摘要 目的调查学龄前儿童蔬菜摄入情况与家长职业、蔬菜认知、饮食习惯、烹调习惯的相关性。方法对无锡市锡山区873名学龄前儿童,连续3天回顾分析调查蔬菜摄入情况;同时调查家长职业、蔬菜认知、蔬菜摄入习惯,分析与幼儿蔬菜摄入的相关影响因素。结果幼儿蔬菜摄入中,瓜茄类、菌藻类、鲜豆类相对不足,叶菜类、根茎类相对较充足,但根茎类主要为油炸或市售加工后食品。家长对蔬菜种类认识正确率为93.2%,认知蔬菜摄入重要者为97.8%,蔬菜日应摄入量知晓率为34.1%,蔬菜合理烹调者为74.9%,家长自身存在偏食者为7.3%。结论学龄前儿童蔬菜的摄入不尽合理,家长职业,家长对蔬菜种类、重要性、日应摄入量的认知、烹调习惯、偏食,均为幼儿蔬菜合理摄入的影响因素,对家长进行蔬菜合理摄入的相关健康教育不容忽视。 Objective To investigate the situation of vegetable intaken among the preschool children and its relation with the occupation, cognition and diet and cooking habits of their parents. Methods A continuous three-day investigation of the vegetable intaken situation in 873 preschool children in Xishan district was conducted. The profession, the cogni- tion towards vegetable and the vegetable intaken related behavior of their parents were investigated. The influential factors for the vegetable intaken situation of the preschool children were analysed. Results Melons, fungis, algaes and fresh leg- umes were relatively taken less, leaf and rhizome vegetables were taken well, but rhizome vegetables were mainly fried or the finished products. The rate of right recognition of parents in vegetable species was 93.2 %, in the importance of vege- tables 97. 8%, in the intake amount 34. 1%. A total of 74. 9% parents could reasonably cook, and 7.3% had dietary bi- as. Conclusion Vegetable intake in preschool children is not well. The parents' occupation, cognition on the species, im- portance and daily intaken amount of the vegetables, cooking habits and dietary bias are the influential factors on the chil- dren's vegetable intake. More attention should be paid to the health education of the parents.
